Easy tasty beef dish

Concocted this last night and dh and the kids loved it, so I figured I'd share. I don't usually use measurements when cooking, so if you're good at guesstimating, give it a try!
you'll need:
1 small-medium onion
1 small can of mushrooms
half of a large yellow or red pepper, cut into 1" strips
2 or 3 cloves of garlic, minced
about 1 lb pepper steak meat, cut into 2" cubes
soy sauce
1 can pineapple chunks or tidbits in its own juice
black pepper
ginger (powdered, not fresh)
Cut onion into quarters and then slice each quarter thinly so you get triangular slices. Put in a large skillet with a little oil on med heat, stirring every so often until they are translucent. Open can of mushrooms, rinse and drain, add to skillet along with yellow or red pepper and garlic, and saute with the onions until all veggies are browned. Then add package of pepper steak, pour some soy sauce over it, and add a can of pineapple chunks or tidbits along with the juice. Add a pinch of black pepper, sprinkle on a little bit of ginger, and fill the skillet with enough water to cover everything. Bring to a boil, reduce heat to low-medium, cover, and let simmer until liquid is reduced and thickened and meat is done - maybe about an hour or so, however long you usually cook it for. Serve over rice. Enjoy!
