Mango Walnut Salad
from Prevention Magazine
spinach or assorted baggy lettuce
chopped mango
sliced red pepper
julienned carrot or baby carrots
walnuts
raisins or craisins
oil & vinegar
In a small salad bowl, toss your lettuces, your fruits, your red pepper, the carrots, and a few crunched up walnuts. Add the dressing and you're good to go !
P.S. Leftovers are good in a whole wheat pita.
