I need morrocan salad recipes-my sister just married a morrocan and my husband and I loved the salads they served at sheva brachos!

Moroccan carrots:
peel carrots and boil until tender
cut into 1/4 inch slices
add lots of chopped garlic, olive oil, salt, pepper and dill

Curried cous-cous:
cous cous salad

I did a Morrocan friday night dinner and can't remember what salads I did...

moroccan carrot salad (cooked)--I add toasted cumine seeds.

moroccan carrot salad (uncooked)--grate 3-4 large fresh peeled carrots. Combine juice from 1 orange and 1 lemon, finely chopped zest from the orange, salt and pepper to taste, 2-3tbsp olive oil. Let it marinate at least for 1 hr.

tomato and pepper salad--remove seeds from 2-3 large green peppers and cut in halves or quarters so it lay flat on a foil pan. Sprinkle a bit of salt. Broil until the skin is charred. Cover with foil and let it steam so you can peel them easily. Peel the charred skin. Chop coarsely, mix with about 4 large or 6 medium chopped fresh tomatoes. Season with salt, pepper, chopped parsley and harisa.

Not really salad but one dessert I really adore is simple sliced or sectioned orange sprinkled with a bit of cinnamon. Plus madjoul dates stuffed with marzipan. Yum!
