I'm making the carrot kugel from the kosher pallete today - I'm making it into muffins strait into the muffin pan, (no liners).. Anyways I'm making it today for Shabbos so I want to freeze it. I ushually never cook ahead but since I'm having company and a busy week I want to make it easier for tomorow. Has anyone ever freezed carrot kugel or muffins before? Do I just put them strait in a freezer bag then defrost before Shabbos to serve? Do they come out tasting good from the freezer?

Also a side question - do you heat this up before serving it for Shabbos lunch on blech or just serve it room temperature?

I always freeze things. You can put it in a freezer bag and then straight in the freezer. Take them out Friday morning so that they will have time to defrost. I would heat them up on the blech.

serving them room temp would also be fine, its not something that NEEDS to be hot

I do it all the time -- they come out great. I love making kugel recipes into muffins Smile Equally good warmed on the blech or room temp.

I have loadsa carrots that need to be used. I've got them peeled already. So I need to make it today or tomorrow.

Carrot Kugel Muffins

8 carrots (4 ½ cups shredded)
2 c flour
2 c sugar
1 t baking powder
1 t baking soda
1 t salt
1 t cinnamon
1 c oil
4 eggs

Mix all ingredients well. Pour into greased muffin tins.
Bake at 325 and bake for 15 minutes.

I know I've made this in loaf pans before, but have no idea how long to bake 'em.... sorry!

I made the one that Binah had in their magazine.

It was really good, though I wouldn't mind a healthier version so I can eat it guilt free. Anyone have such a recipe, I.e. less sugar, etc. (I know I can cut the sugar....)

I've made carrot muffins with whole wheat flour, applesauce for 1/2 the oil, and a bit less sugar, and my kids didn't even know the difference!!
They freeze beautifully.
I usually flash freeze them (spread them out on a cookie sheet and put in freezer till frozen) and then put in a ziplock bag. They don't stick together this way. I double or triple the recipe, and just defrost as needed.

2 loaf pans. I think it made 18 or 24 muffins, but I dont remember. I usually make mini muffins and it makes a bazillion. and they never make it thru shabbos.
