Chocolate Mint Brownies

Brownie layer:
1 cup sugar
1/2 cup marg.
4 eggs
1 cup flour
1 1/2 cup chocolate syrup

Mix sugar and marg. adding eggs one at a time. Beat in chocolate syrup and then flour. Beat until smooth. Bake at 350 for 25-30 minutes. Cool completely

Mint cream layer:
2 cup confectioners sugar
1 stick marg
1 T. water
1/2 tsp mint extract
a few drops green food coloring

Beat until creamy. Spread over cooled brownies. Cool.

Choc topping:
6 T. marg
1 cup chocolate chips

melt in top of double boiler (or in microwave) until smooth. Pour over mint layer.

chill until chocolate is set. Then cut into pieces. Keep chilled, if left at room temp it will get mushy.

why is it that the mint is always in a topping? why isn't the mint ever put in the actual brownie batter? I've seen a few recipes and that's how it's always been. (these look good btw)

Ha! I thought I was the only one that thought of mint flavored cake/ice cream as toothpaste. My husband totally does not hear me, but I will not make mint food in this house.

why not use mint mouthwash instead of toothpaste? then you can get a little alcohol kick... Smile

but seriously I made a very similar recipe from last year's hamodia magazine and it was a big hit! enjoy it!
