I just typed up this much loved recipe, so I figured I'd post it.

Zucchini Soup

3 Tbsp canola oil
3 large onions, chopped
3 cloves garlic, roughly chopped
6-8 medium zucchini, with skin, ends trimmed, and cut into chunks
1 Tbsp fresh parsley, chopped (I use 1 tsp dried parsley)
1 Tbsp fresh dill, chopped (I use 1 tsp dried dill)
1 Tbsp fresh basil, chopped (I use a tiny touch of dried basil)
7 cups chicken broth, can use parve bouillon dissolved in water (I usually use water and then add a lot of salt to taste at the end)
salt
freshly ground black pepper

Heat oil in 8 qt pot over med-high heat. Add onions and garlic and saute 5-7 minutes.
Add zucchini for 3-5 minutes. Then parsley, dill and basil for 3 minutes. Add broth or water. Bring to a boil. Cover pot and simmer 25 minutes.
Blend soup. Season with salt and pepper to taste.

This looks pretty much like the recipe I made off the top of my head, except I didn't use all the herbs. Maybe I'll try them next time. My soup was delicious; maybe this way it will be stupendous.

Make this often, actually just this past shabbos. My husband looooves it. It also looks very pretty.

What can I serve in zucchini soup? I.e. knaidel, dumplings

And how can I stretch it. I don't think I'll have enough- should I add a potato or s/t?

I guess you can serve kneidels on dumplings in the soup if you'd like.
And if you need to stretch it for more people, then yes, I think potato goes nicely with zucchini.

I was thinking if I make knaidlach it would displacd the soup and I won't need to serve as much to each person.

I think I'm going to turn it into a veggie soup though, cuz I don't know if just a potato or two will stretch it enough.

I make this soup often, and we love it! I just wanted to comment on the bouillon vs. water+salt. . . I always used a bouillon, and today I made it for the first time using water with extra salt, like ra_mom mentioned. I actually liked it better than the bouillon version! Just wanted to share that in case anyone finds it helpful.

made this tonight it was yummy!!! Do you puree it? My hubby didn't like the pieces so before I froze the extra containers I puree'd it.

Yes, we puree it, and it's super smooth and creamy.

I usuallly puree it, or if I'm in a "chunky" mood I just use a potato masher.

I've served it with little meat wontons (my version of krepelach) and it was delicious that way too. Also great for a light dinner with fresh rolls and some cheese for protein.

I second that. I make this all the time and often freeze. Comes out perfect. Made for yontiff and literally there was none left
