I put in potato kugel to bake at 6:30, baked it for an hour on 450, and at 7:30 added water and lowered it to 300 (lowest setting on my oven)
When do I close the oven? (its in there already for 6 hrs. on a low setting)
Can I leave it outside or do I put it in the fridge while its hot?

when I do overnite kugel, I usually set it on 250 and it can go for a long time. there is no set amount, 6 hours is long enough if you have to leave, but you can leave it longer if you want

Last week shabbos, we put in 2 bekelech for overnight. I cut one up in the morning for kiddush, and the second one I left in till motzai shabbos. It was yummmmmm soft, brown, and not a drop was left over. So it was in for like 26-30 hours.

My overnight potato kugel says either 5 hours on low (plus about 1.5 hours on high temp) or overnight. My friend who made it overnight found it was a bit dry.

For the future, I know many people who buy a tiny little crock pit and pour the batter into it and let it go for hours. It comes out amazing.
