1 cup salsa
1/4 cup creamy peanut butter
2 T. orange juice
2 T. honey
1 tsp soy sauce
8 oz. uncooked fettuccine
3/4 lb chicken breast, cut into strips
1 T. vegetable oil
1 medium sweet red pepper, cut into strips
1/4 cup minced fresh cilantro

For sauce, in a microwave-safe dish, combine first five ingredients. Cover, microwave on high for 1 minute. Stir. set aside.

Cook the fettuccine according to package directions. Meanwhile, in a large skillet, cook the chicken strips in oil over medium heat for 3-5 minutes or until browned. Add the sweet peppers and cook and stir until tender/crisp.
Topped drained fettuccine with chicken mixtures and sauce. Sprinkle with cilantro.

I haven't tried this yet, but it looks really good.

Ok, here's the report. It was truly amazing. It was fast to make and really delicious.

I added 2 sliced scallions along with the peppers and didn't use cilantro (dh hates the stuff.)

The sauce was really good. It would be good on pasta even w/o the chicken.

I used fresh pasta because I had some in the house.

This is definitely something I would make again and again.

I just made it for supper. It was a big hit! Even DS ate it! well, atleast the sauce part. he wouldn't touch the peppers or chicken.

The only dif. is once the chicken & peppers were cooked, I poured the sauce into the pan & let it simmer a bit to get the flavor into the chicken.

where do I find fresh cilantro and what does it look like? do I have to clean it a certain way?

I didn't use cilantro either.
But if you want, you buy it in a fruit/vege store just like parsley, dill,... I think it's also called coriander.
