I am looking for tofu recipes. I just bought a block (?) of tofu for the first time. I want to try out some different recipes.

Also, my favorite tofu recipe, courtesy of elisecohen (copied from this topic: http://imamother.com/forum/viewtopic.php?t=3386):
Tofu Jambalaya:
1 lb firm tofu, drained, then frozen and thawed for about 4 hrs at room temperature
1 14.5 oz can diced tomatoes
1 T cooking or olive oil
1 chopped onion
3 minced cloves garlic
1 green bell pepper, diced
2 sliced stalks of celery
2/3 C chopped fresh parsley or 1/4 C dried
2 bay leaves
2 tsp dried thyme
1/4 tsp cayenne pepper
1 C brown rice
Cut the drained tofu into 1/2" cubes. Cook the garlic and onion in the oil in a skillet for about 3 minutes, til a little tender. Add the tomatoes in their juice, about 2 cups of water, and all the other vegetables and seasonings and cover. Bring to a boil. Stir in the tofu and rice and simmer, covered, about 40 minutes.
Since this only takes a couple of minutes at the stove and then sits simmering for so long (and can be left sitting off the flame for 30 minutes or so covered and still stay warm too) it's a great meal when you have an infant or small child who always wants attention during that last 1/2 hr before dinner, or if you have an uncertain dinner time due to husband's schedule and commute or newborn's nursing schedule.
It's so easy that my 11 yr old can make it pretty much all on her own, too, since you don't really fry anything in the oil just soften the onions and then just pour things in.

| Saute onions and garlic in a little bit of oil. Add cubed tofu and saute to give it the garlicy onion flavor. Add two bags of frozen stir fry veggies and cover till tender. Pour some soy sauce over and either serve it on rice, mashed potatoes or pasta.
