we're making sheva brochos for my sister-in-law. there is about 10 of us cooking. we are looking for fleishig -
possibly some kind of fruit then.....any ideas?and recipes - something classy and different.

im terrible at being specific and describing things, but I can give u a vague idea..

chicken in flaky dough, so many ways to do it..
angel hair pesto with salmon chunks on top
mushroom bourekas with sauce
two tone soup
soup in bread bowl
roast
sesame chicken, baked
chicken puffs with kishka and spinach ( recipe on here...)
( I would reccomend going on the recipe section here and looking for all these diff recipe ideas, there are plenty. and if u want to see pics, there are facebook groups that have a ton of pics u can look at and recipes too.. go to facebook and type in kosher..)

acorn squash with wild rice and craisins
sauteed veggies
green bean kinda thingie
diff salads

desserts are not my thing..so cant help u there... sorry!

I just ate at a friend's house and she served the Asian Steak Salad from the KBD. It was incredible!! I don't know why I never noticed the recipe in all of the years I've used it. It's great for starting the meal, or as a large salad as part of a main course.

10 of you cooking--good for y'all! It will be helpful if you can let us know how many guests you're expecting, whether it is going to be sit-down or buffet. You can assign one person to bring one dish but share the costs afterwards.

something with fruits--you can do either cold fruit soup or slices of melon with smoked salmon for appetiser. of course you can do fruit salad for dessert--keep it regular size fruit salad if buffet, you can chop them into smaller bits, serve in individual plastic cups (drizzled with raspberry sauce, topped with custard or cream or crushed meringue shells, serve with crushed jello) if you want it fancy.

something classy and elegant for appetiser--mushroom brekas in filo dough (admitedly a bit labour intensive but definitely worth it), cold soup (vichycoise, pea and mint, gazpacho in individual cups), stuffed mushroom, vegetable kebabs (courgettes, mushrooms, red onions, yellow/orange peppers), salmon with chopped spinach in flaky dough, smoked salmon "roses", gefilte fish sushi

two types of main: one chicken one red meat. apricot chicken, coronation chicken (with curry mayo, apricot or mango, can be served cold), chicken on skewers, schnitzels with marsala mushroom sauce, veal ossobucco (f you can get veal shanks), stuffed vegetables (courgette/zucchini, onions, red peppers stuffed with ground meat/rice), roast, lamb chops, lamb kebabs

don't forget something fish/vegetarian for non carnivores, meatballs if there are going to be children

sides-veggies: sauteed green beans with toasted almond slices (or fried onions/garlic if nut-free), broccoli kugel, grated carrot salad, green salad with heart of palm, courgette/zucchini sticks (parboiled and sauteed simply)

sides-starch: lokshen kugel, roasted baby red potatoes (with rosemary), safran rice or rice pilov with dried cranberries and toasted pinenuts, pasta salad with chopped sundried tomato (pretty with tricolour fusili or with bowtie pasta)

sounds good whats the cold soup recipe? try to be exact, please!

smoked salmon roses? take lox and form it into roses (the same idea as fruit leather) is that what you meant?

salmon in flaky dough- looks like a knish or is there a nicer way to display it?

and what do u do with the zucchini sticks

all your ideas sound great!

When my family made sheva brochos for my sis we made:

melons cut up in a small trifle bowl with the sauce & crunch on top (from the apple salad recipe)
a yummy cream of chicken soup
the main course was:
chicken cutlets (I don't remember what type)
little red potatoes
squash kishka kugel in the shape of muffins
apple cherry turnovers!

I'd start off with a lettuce salad with fruits already on the plate.

Then some sort of soup - zuchinni? pareve cream of _______? potato leek? I have a couple of fancy soup recipes if you're interested.

Main dish - Sesame chicken, roasted vegetables, mashed potatoes with leek and a potato chip...
Serve the main dish individually plated - not in serving platters. have on the table diff salads etc...

just a thought.

I helped my in-laws make sheva brochos for someone on a friday night and we started with a small salad on a plate in edible bowls made out of egg roll wrappers baked over ramekins. We had pepper crusted salmon, french roast, lemon chicken, roasted potatoes, sweet and sticky greenbeans, a few kugels...this is a Firday night menu though so I don't know if you'd want to do this during the week??

A really easy fruit soup recipe is a few containers of riches whip, a few cans of pineapple , a few cans of mandarin oranges, and a few containers of strawberries in sugar ( they come frozen). There are no exact measurements in terms of how many cans or cartons. The more people you have the more ingredients you use. You can just keep it in the fridge until you are ready to serve it and you can do it a few days in advance because it stays for a while. G'luck.

cold soup--sorry I didn't elaborate but there are enough entries under soup (gazpacho, cold fruit soup, vichycoise), you can search cold soup.

smoked salmon roses--exactly the way you described.

salmon in flaky dough--I use a whole half-fillet, then you slice in individual pieces so you can see pink from the salmon and green from spinach.

zucchini sticks--I usually keep them simple. Steamed. Can be served either with mayo-mustard dip or dressed with italian dressing.
