We're not making Pesach this year, B"H, but we're coming home the Friday after Pesach. As I'll be working part of that Friday, I'm trying to figure out what to do for the Shabbos after. We don't sell chametz gamur, and I think that most kugels fit into that category. So I want to have food in my freezer that I can just take out and warm up on Friday for Shabbos. Thought I'd make a side this week, double it, and freeze the second one for the Shabbos after Pesach. Any ideas? Besides potato kugel...
Since I've never made Pesach before (we haven't been married young, and we go to our parents every year), I don't have any Pesach recipes and don't know what would freeze well. We'd be fine with a "Pesach kugel" or something similar...any other ideas are welcome too.

How about freezing soup? Cooked chicken on a tray? Kneidlach freeze very well. You can also cook a roll of fish, defrost it in the oven so it dries out. Open up a can of veg, some frozen dessert & your set.
For Shabbos day, serve cold chicken & make a pareve cholent, it takes 5 minutes to throw everything in.

| Sorry, I should have been more specific. I have fish, meat, and soup in the freezer, so that's fine. I'm going to buy challah. I'm just stuck with side dishes. I might just make a salad, but I'd really like to have at least one "normal" side dish, like a kugel or something similar...

Potato kugels aren't "simple" for me to make - that's why I said that's the one thing I'd rather not try this week.
And we're really not super-fancy on Shabbos, but I'd like something a bit more Shabbos-dik than a can of veges. (I'm not saying that people shouldn't serve them if necessary, just that I'd rather not if I can get around it.)

Hm, the mushroom onion kugel sounds good. Do you have a recipe for it?
We don't really eat broccoli or cauliflower (really expensive to buy bodek, and we don't eat regular frozen or fresh), and my cranberry apple kugel is definitely chametz gamur - it has oatmeal "gunk" on the top and bottom. If you have one that isn't, though, I'd be glad to try it!

Mushroom Onion Quiche
16 oz. sliced, canned mushrooms
2 large sweet onions, diced
1 stick margarine
mushroom soup mix (optional)
garlic powder
pepper
3 eggs
½ cup mayonnaise
2 tablespoons potato starch
2 tablespoons onion soup mix
Saute onion in margarine until softened. Add mushrooms, and brown. Add seasonsings. Cook, stirring, over medium flame for 1 minute.
In separate bowl, mix eggs, mayonnaise, potato starch and onion soup mix. Add mushroom/onion mixture and mix well. Pour into small round casserole and bake at 350-degrees for ½ hour to 45 minutes.
