Can you make you own minced fish in a food processor?

I'm making gefilte fish for Pesach and I can go to a local store to get whole fish, but I would have to go a much further store to get minced fish with a good hashgocha for Pesach and I won't have time to go once my kitchen is kosher l'Pesach. Can I buy it whole and mince it myself using the helicopter blade in a food processor or will it go horribly wrong? Does anyone know?

while I'm at it, does anyone have good gefilte fish recipes for Pesach - no matza meal, no oil, and pref no nuts. Thanks!

do you have the pesach lubavitch cookbook? Theres one in there that we make everywhere and is gr8 and meets all your requirements... Wink

Use LOTS of eggs to bind it, ground onion & carrots + salt, of course. Boil it slowly, careful not to let it burn. Put carrots & onion in the water as well. If you use sugar, throw some in. If you use only boiled sugar, add it to the water.

You sure can. For every batch of fish in the food processor, throw in one egg to make the processing easier. also,don´t overfill the food processor. Then mix with minced onion and carrots, salt, sugar if you use (pear juice or apple juice can also be used) and mix well --you should use your hands to mix it well. If the quality of the fish is good it will not need potato starch at all (I never put in starch, breadcrumbs or matza meal during the year).
