I cook, cool, peel and dice the beets. Dice an onion. Add cumin, salt, black pepper, olive oil, vinegar sometimes a splash of lemon juice.

| Like Yesha makes it but with green scallions and raw carrot for crunch. I also omit the oil there is no need for it.
