Yes, this is for the tiny couscous. I buy the orange & green couscous - it's prettier.

1 c of raw couscous cooked according to package directions
1/2 can chickpeas
1 bunch of scallions, chopped
1 red pepper , diced
2 1/2 t curry powder
1/2 t salt
1/2 t pepper
1/4 c lemon juice
3/4 c olive oil (I put less)

I like to take cucumbers, tomatoes, and scallions and cut them up into the couscous.
I add lemon, oil, salt, pepper, garlic powder, etc...
Mix and enjoy!

I make couscous and add
tomotoes
cucumbers
scallions
(whatever else I have laying around the kitchen)
fresh mint
olive oil
lemon juice
paprika
cumin
salt pepper

I think that is it, but I don't have recipe on me. it's from kosher palette 2.
I have also left out the fresh mint and it still tastes yum.

here's another

2 cups couscous (I sometimes use the garlic & oil flavored boxed type)
Cooked, diced chicken (I boil a small chicken and use the broth for something else)
1 pint cherry tomatoes, halved (or 1 15 oz can fire roasted, diced tomatoes)
1 onion sliced or 3 or 4 green onions sliced
1 15oz can chick peas

cook cous cous by pouring 2-1/2 cups boiling water over it and let it sit for 5 or 10 minutes until it soaks up. Toss with remaining ingredients.

Make a dressing of 1/4 cup olive oil + 1/4 cup vinegar (I use white balsamic or regular balsamic but use what you like) and toss with salad.

Its great served right away or chill until needed. Great for picnics too.

This is one of my favorite recipes...I've made it with tiny couscous, big couscous, bottled curry sauce...today I even made it using quinoa!
