Roasted Pepper and Eggplant Spread
THANK YOU, SPARK PPL !!!

Ingredients:

3 red bell peppers, cut up
1 red onion, cut up
1 medium eggplant, peeled & cut up
3 cloves of garlic, minced
3 Tbsp. olive oil
1 1/2 tsp. salt
1/2 tsp pepper
small can tomato paste


Directions:

Heat oven to 400 degrees Fahrenheit.

In a large bowl mix together all ingredients. Pour out onto a large baking sheet and bake for 45 minutes, stirring once while cooking. Let cool slightly.

Place in food processor and pulse three or four times. Scoop into bowl and serve at room temp.

This sounds delicious!

When do you add the oil? When you roast it or pulse it? Do you pulse it to a mush, or leave it a little 'piecey'?

Cheap. And check in your grocery store's section for dented canned goods. I can get cans there for like a quarter each.
