I would like to make a veggie soup for after the fast tonight. But my dh doesnt eat carbs at the moment - so no noodles, potatoes etc. I have only some basic vegetables in the house - carrots, zucchini, onions, mushrooms etc. Any recipes, please?

Zucchini Soup
3 Tbsp canola oil
3 large onions, chopped
3 cloves garlic, roughly chopped
6-8 medium zucchini, with skin, ends trimmed, and cut into chunks
1 Tbsp fresh parsley, chopped (I use 1 tsp dried parsley)
1 Tbsp fresh dill, chopped (I use 1 tsp dried dill)
1 Tbsp fresh basil, chopped (I use 1 tsp dried basil)
7 cups chicken broth, can use parve bouillon dissolved in water (I usually use water and then add a lot of salt to taste at the end)
salt
freshly ground black pepper
Heat oil in 8 qt pot over med-high heat. Add onions and garlic and saute 5-7 minutes.
Add zucchini for 3-5 minutes. Then parsley, dill and basil for 3 minutes. Add broth or water. Bring to a boil. Cover pot and simmer 25 minutes.
Blend soup. Season with salt and pepper to taste.

Mock Potato Soup- Diet
1 onion, diced
1-2 cloves garlic (according to taste), minced
oil for sauteing
2 large zucchinis, peeled
1 lb frozen cauliflower
1 T. salt
dash of (white) pepper
Saute onion and garlic in oil until translucent. Slice zucchini and add to pot, together with cauliflower and spices. Add water until the vegetables are just covered. Cook for half an hour and then blend with a hand blender

I love this soup, yummy & filling:
Vagetable-Lentil Soup (I just throw stuff in so forgive me )
Chopped onion
Cubed carrots (about 3)
Cubed Zucchini (about 3)
Cubed Kohlrabi and/or butternut (1 big kohlrabi/ 1/2 butternut)
Can chopped tomatoes
2 TBS tomato paste
1/2 cup green lentils
Fry onion, add cubed veggies, fry for a few minutes. Add canned tomatoes and another can of water.
Check lentils and add. Add tomato paste. Stir and simmer till veggies are soft.
Season with salt,pepper, a little garlic powder.
Other good veggies I've added: any squash, leeks, s/potato, potato (if not low carb)
When I was low carbing I ate this with a portion of whole-wheat couscous for a complete meal.

Just made this last night. It was delicious-Thanks! I added garlic powder for taste and would add more garlic cloves next time!

Carrots, zucchini, onions, and mushrooms all have carbs. I see that this is a relatively old thread, but people should be aware... While they may all be low(ish) in carbohydrate, none of these ingredients or recipes are carbohydrate free.
Raw carrots have about 9grams of carbs per 100 grams of carrots, zucchini 3.5grams of carbs per 100 grams, onions are 10 grams of carbs per 100 grams of onion and mushrooms are 3-6 grams (depending on type) of carbs per 100 grams of mushrooms.
